I love eating egg plant, they are easy to make and you can create so many different things with them.They are easily available in Karachi throughout the year and a must buy in our grocery list. This recipe is a must try it’s spicy and a great appetizer .I am sure all ingredient are right now in your pantry so don’t kid yourself and give this recipe a shot.
What will
you need?

1 large eggplant
·
1tsp garlic paste
·
½ tsp crushed cumin
·
¼ cup olive oil or
vegetable oil
·
1 lemon
·
1tsp crushed red chilies
·
½ tsp red chili powder
·
½ tsp turmeric
·
¼ tsp ground spices
·
salt, to taste
·
¼ cup oil
INSTRUCTIONS
1.
Slice the eggplant into
slices ⅛th of an inch thick. Take a shallow bowl add all ingredients in it,
make a mixture of spices so very thing combines perfectly.
2.
Now add eggplant slices. Let
them marinate for at least 30 minutes.
3.
Preheat a pan over
medium-high heat. Add 2 tablespoons of oil.
4.
Now add the slices in to
pan. Fry the slices, until golden brown. Do not use excess oil to fry them. You
can add oil time to time when necessary.
5.
Serve with boil rice or
Naan.

I enjoyed this simple to prepare recipe and yes,we all have those ingredients in our pantry.I think I would serve this with some meat dish - the meat prepared very simply, spice wise as the eggplant has lovely flavours. I liked the visuals, especially the sliced eggplant and the spiced pieces, before frying. Well done, Sehar. :)

ReplyDeleteMy nani jaan makes these egg plants slices and it's so tasty to eat with daal chawaal. I am not a fan of egg plants but they taste good when fried.
